Technique to learn
Blooming an aromatic paste
Frying pounded shallot, garlic and chili in oil before adding the rice cooks out their raw edge and spreads flavor through the oil that coats every grain.
Instructions
Step 1: Pound or blend the shallots, garlic, chili and shrimp paste (if using) into a rough paste.
Step 2: Heat 2 tbsp oil in a wok over medium-high heat. Fry the paste for 2–3 minutes, stirring, until fragrant and slightly darker.
Step 3: Add the rice, breaking up clumps, and toss until heated through, about 3 minutes.
Step 4: Add the sweet soy sauce and soy sauce; toss until every grain is coated. Taste and add salt if needed.
Step 5: In a separate pan, fry the eggs in the remaining oil until the edges are crisp and the yolks are cooked to your liking.
Step 6: Serve the rice topped with an egg, with cucumber and fried shallots on the side.
Cooking tips
- Omit the shrimp paste for a fish- and shellfish-free version; check the sweet soy sauce label for wheat.
