Instructions
Step 1: Place quartered potatoes into a large pot of salted water, bring to a boil, and cook for 15 minutes until tender.
Step 2: Blanch fresh spinach in boiling water for 1 minute, drain, cool in ice water, and blend with 2 tablespoons of water into a smooth green puree.
Drain cooked potatoes, add green spinach puree, and mash thoroughly with a potato masher until smooth and evenly green.
